Garlic Scape and Cilantro Pesto
/1/4 cup pine nuts
1/2 cup coarsely chopped garlic scapes
1 bunch of cilantro minced
Juice and zest of 1/2 lemon
1/2 teaspoon salt
A few generous grinds of black pepper
1 teaspoon crushed red pepper
1/2 cup extra virgin olive oil
1/4 cup grated Parmigiano Reggiano cheese
Add this pesto to any pasta dishes with a little bit of fresh chevre and you can’t go wrong.
